Thanks for the warm welcome!

I want to do a short and sweet post tonight on how glad I am that I have been able to connect with so many other great blogger's that are interested in health and nutrition like I am. One of the best parts of my day is when I read all your new posts! I get so excited when I get new comments and it puts a smile on my face every time. So thank-you for welcoming me into the blogging circle!! I am so happy to be here to share and learn with all of you!

I've made two salads this week that I wanted to share.  They made huge portions and I was able to pair them with a couple of dinners as well lunches which was great!

I didn't have a ton of time this week to make fancy dinners so it was great to have a tasty salad prepped that I could pair with a quick and easy meal.

Raw Kale Salad with Pumpkin Seed Dressing 



I paired this with broiled organic steaks and black rice. I haven't eaten red meat in almost 2 months so it was a bit strange to have a steak and I'm still not sure how much I enjoyed it,


Second Salad:
  Quinoa, Chickpea and Feta Salad 



I paired it with sweet potato and curried cauliflower! It was delicious. I will be posting both recipes for these salads this weekend!


Something about me that you wouldn't know, my eyes change colour. I haven't quite figured out if they change colour by themselves or if my mood affects the change. Maybe its the weather or how much sleep Ive gotten the night before. I don't really know what it is, but I still find it fascinating. Most days my eyes are hazel but they have been bright green and bright blue before as well!! How strange is that!


As I was doing my make-up this morning for work I noticed they were leaning towards the blue side lol!

Have a great night everyone, yay it's Friday tomorrow!!! This week has just flown by, I am going to take the night off my studies and go immerse myself in a novel.....

  2. That quinoa salad looks amazing! I love the texture of quinoa - it's so light and fluffy, but super hearty at the same time.
